Super Chocolatey Cheesecake
Ingredients
For the Biscuit Base:
-85g hot melted butter
-14 plain chocolate digestives, crushed
For the Cheesecake:
-900g of full-fat Philadelphia cheese
-200g golden caster sugar
-4 tbsp cocoa, sifted
-2 tsp vanilla extract
-3 large eggs
-100g dark chocolate
-2/3 tbsp milk
-284ml double cream
Method:
1. Preheat the oven to 180C. Line a tin with greaseproof paper.
2. Melt the butter and mix with the crushed digestives. Firmly place into base of tin and bake for 10 mins.
3. Turn temperature up to 240C.
4. Beat cream cheese and sugar with an electric whisk until smooth then whisk in cocoa, vanilla, eggs and half the melted chocolate.
5. Stir enough milk into the remaining chocolate making a chocolate sauce.
6. Grease the sides of the tin and pour cheese mixture.
7. Bake for 10 mins then turn down heat to 110C for 25-30 mins. The filling should be set but wobbly in the middle. Turn off oven, open the oven door a little and leave to cool for 2 hours.
8. Decorate cheesecake by removing from tin. Whip some cream, swirl it on top of the cheesecake and drizzle some chocolate sauce.
9. Serve and enjoy :)
