Adorable Lil' Cupcakes


Ingredients:
-110g of softened butter
-110g of caster sugar
-2 lightly beaten eggs
-1 tsp of vanilla extract
-110g of self raising flour
-1-2 tbsp of milk

For the buttercream icing:
-140g of butter
-280g of icing sugar
-Few drops of food colouring

Method:
-Preheat the over to 180 degrees.
-Line a 12 hole muffin tin with paper cases.
-Cream together the butter and sugar.
-Beat the eggs into the mixture a bit at a time to avoid it curdling. 
-Stir in the vanilla extract.
-Fold the flour into the mixture then add a tbsp or 2 of milk if needed.
-Bake for 10-15 minutes, till golden brown and when a skewer inserted into one of the cakes comes out clean. 
- Cool the cakes or put them in the fridge so that you are able to decorate them.

For the icing:
-Beat the butter till soft then add half of the icing sugar.
-Add the remaining icing sugar until smooth and creamy.
-Add food colouring and combine well. 
-Spoon into a piping bag and decorate.


Personally, I love these cupcakes, they are so simple but they look adorable. They are so cute and photogenic if you want to have a picnic or just a lil afternoon snack.
