Candy Cane Cupcakes




Heyy!!! Welcome to another #JustDessert! To start of the Christmas Season I have something very festive for you. When you think of Christmas and sweets the first thing that pops into your mind is Candy Canes of course. This recipe is super simple, using the same chocolate cupcake recipe but with a sweet icing that makes the cupcakes so special and festive. 

Ingredients for Chocolate Cupcakes:
-175g Butter
-165g Caster Sugar
-3 eggs
-40g Cocoa Powder
-125g Self-Raising Flour
-1 tsp Baking Powder

Ingredients for Candy Cane Icing:
-200g Icing Sugar
-100g Butter
-1/2 tsp peppermint extract
-1tsp food colouring of your choice
-Candy Cane crushed and Candy Canes for decoration

For the Chocolate Cupcakes:
-Pre-heat the oven to 180 degrees Celsius and line a cupcake tin with 15-18 cupcake cases
-Cream the butter and sugar together in a large bowl
-Add the eggs into the bowl, one egg at a time 
-Sift the flour and cocoa and baking powder into the bowl
-Mix the ingredients till it has all combined 
-Spoon the mixture into the cases and bake for 15 minutes till a skewer comes out clean. 
-Once cakes are cool you can decorate them however you like. 

For the Candy Cane Cupcakes: 
-Beat the butter and icing sugar together.
-Once smooth add the peppermint extract and food colouring. 
-Place into a disposable piping bag and decorate.
