Red Velvet with a Twist
Everyone loves a lil bit of Red Velvet and cheesecake. Well to satisfy these people I have created a twist on the classic red velvet cupcakes. I sold these at charity cake sale and well they were a hit. Hope you enjoy.
Ingredients:
-50g butter
-14 Chocolate digestive biscuits
-60g butter
-150g caster sugar
-1 egg
-10g cocoa powder
-1tsp red food colouring
-1/2 tsp vanilla extract
-120ml buttermilk
-150g plain flour
-1/2 tsp salt
-1/2 tsp bicarbonate of soda
-1/2 tsp white wine vinegar
-300g icing sugar
-50g butter
-125g cream cheese
Method:
-Preheat the oven to 170 degrees Celsius.
-Crush the digestives and mix with melted butter. Place in each cupcake case and pat down.
-Cream the butter and sugar till smooth.
-Slowly add the egg and mix well.
-In another bowl sift cocoa powder, red food colouring and vanilla extract. Mix in the butter mixture and combine well.
-Add half the buttermilk then half the flour. Repeat till all buttermilk and flour has been added.
-Add the salt, bicarbonate of soda and vinegar. Mix well.
-Spoon the mixture into the paper cases and bake for 20-25 mins till the skewer comes out clean.
For the cream cheese icing:
-Beat icing sugar and butter together.
-Add the cream cheese and mix well.
-Be careful not to over mix as it could become runny.
-Finally decorate.
