Oreo Cupcakes


Ingredients: 
-175g Butter
-165g Caster Sugar
-3 eggs
-125g self-raising flour
-1 tsp baking powder
-1 pack of oreos


Method: 
-Pre-heat the oven to 180 degrees Celsius
-Cream the butter and sugar
-Add the eggs; one egg at a time ensuring they don't curdle
-Sift in the self-raising flour, cocoa powder and baking powder and mix till smooth.
-Take around 5 oreos, place into a plastic disposable bag and crush. Once crushed mix into the mixture
-Place a spoonful of mixture into cupcake cases and bake for 10-15 mins
-The cupcakes should be done when a skewer is placed inside the cupcake and it comes out clean. 

For the icing:
-100g butter
-200g icing

Method for the buttercream icing:
-Mix together the butter and icing till it's of icing consistency. 
-Spoon into a piping bag.
-Decorate cakes.
-For pieces of chocolate on top; take an oreo and halve it. Rub together over a cupcake till there are as much chocolate cookie crumbs as you desire. 
-Take another oreo, break into half and place one half on top of each cupcake. 


Oreo cupcakes are by far my favourite cakes to make and to eat. Oreo cupcakes are what I call diabetes in a cupcake as they are usually the first cakes to disappear at parties and they usually get people wanting more. Hence the name diabetes in a mini cake because once you've had one, you won't want to stop.
