Tropical Mango Vanilla Cupcakes



Hey!
For todays #JustDessert post we have an exotic cupcake using mango as a main ingredient. If you want something simple and not too sweet this is the thing for you.

Ingredients: 

For the cupcake:
-1 and a third Cup Plain Four
-1/2 tsp baking powder
-1/2 butter
-1 cup sugar
-1 egg
-1/4 vanilla yogurt
-3/4 cup milk
1 tsp vanilla extract

For the icing: 
-3/4 cup butter
-1/2 cup mango puree or pureed mango
-1/2 vanilla extract
-4 cups icing sugar

Method:

For the cupcake: 
-Preheat oven to 180 degrees Celsius and line a cupcake tin with 12 cupcake cases
-In a large bowl, sift flour and baking powder 
-In a medium bowl, cream the butter and sugar. Add in the egg, yogurt, milk and vanilla.
-Mix gently then add to the dry ingredients. Mix till smooth but try not to over mix.
-Spoon into the cupcake cases then bake for 18-20 minutes.
-For the icing; whip the butter, add the mango puree and vanilla. Then add the icing sugar and mix well till smooth. 
-Spoon the icing into a piping bag and decorate cakes ensuring they are cool before decorating.
